    Prepare the Flank Steak

    In a large pot, heat the olive oil over medium heat. Add the flank steak and sear on all sides until browned, about 5-7 minutes.

    Add Vegetables and Spices

    Add the sliced onion, bell pepper, and minced garlic to the pot. Sauté until the vegetables are soft, about 5 minutes. Stir in the crushed tomatoes, cumin, oregano, bay leaves, salt, and black pepper.

    Cook the Steak

    Cover the pot and reduce the heat to low. Let the mixture simmer for about 2 hours, or until the steak is tender and easily shredded.

    Cook the Rice and Beans

    While the steak is cooking, prepare the rice according to package instructions. In a separate pot, heat the canned black beans until warm.

    Prepare the Yucca

    In another pot, boil the yucca in salted water until tender, about 20-25 minutes. Drain and set aside.

    Shred the Steak

    Once the steak is cooked, remove it from the pot and shred it with two forks. Return the shredded meat to the pot and mix it with the sauce.

    Serve

    On plates, serve the shredded ropa vieja with rice, beans, yucca, and sliced avocado. Drizzle with tamarind sauce and salsa to taste.
