Coffee Roasted Heritage Pork Recipe

    Prepare the Pork

    Preheat your oven to 300°F (150°C). In a small bowl, mix together coffee grounds, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture all over the pork shoulder.

    Sear the Pork

    In a large oven-safe skillet, heat vegetable oil over medium-high heat. Once hot, add the pork shoulder and sear it on all sides until browned (about 4-5 minutes per side).

    Add Tomatoes and Veggies

    Remove the skillet from heat and add the smoked tomatoes and mixed veggies around the pork.

    Roast in Oven

    Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Roast for 3-4 hours, or until the pork is tender and easily shreds with a fork.

    Add Cheese

    In the last 15 minutes of cooking, remove the lid and sprinkle the cheese blend over the pork and veggies. Return to the oven uncovered until the cheese is melted and bubbly.

    Serve

    Remove from the oven, let it rest for a few minutes, then shred the pork and serve with the roasted veggies and melted cheese.
