    Prepare the Potatoes

    In a large pot, bring salted water to a boil and add diced potatoes. Cook for about 10-12 minutes until tender. Drain and set aside.

    Cook the Bistro Filet

    Season the bistro filet with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add the filet and cook for about 4-5 minutes on each side for medium-rare or to your desired doneness. Remove from heat and let rest for a few minutes before slicing.

    Sauté Rajas

    In the same skillet, add the rajas (sautéed poblano peppers and onions) and cook for 2-3 minutes until heated through.

    Assemble the Dish

    On a serving plate, layer the cooked potatoes, sliced bistro filet, sautéed rajas, and cheese blend. Drizzle with chimichurri sauce and garnish with chopped cilantro.
