    Prepare the Beef

    Trim excess fat from the beef chuck roast and cut it into large chunks.

    Make the Sauce

    In a dry skillet over medium heat, toast the guajillo and ancho chiles for about 2 minutes until fragrant. Remove stems and seeds. Blend toasted chiles with onion, garlic, cumin, oregano, salt, black pepper, and 1 cup of beef broth until smooth.

    Cook the Beef

    In a large pot, brown the beef chunks on all sides. Add the blended sauce, remaining beef broth, and bay leaves. Bring to a boil, then reduce heat and simmer for about 3 hours until the beef is tender.

    Shred the Beef

    Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot to soak in the juices.

    Prepare the Tacos

    Warm the corn tortillas on a skillet. Fill each tortilla with the shredded beef and top with chopped cilantro and avocado slices.
