Prepare the Filling
In a large bowl, combine the shredded beef, Oaxaca cheese, wild mushrooms, mashed potato, chopped chipotle peppers, salt, and black pepper. Mix well until all the ingredients are evenly combined.

Make the Dough
Prepare empanada dough using your favorite recipe or a pre-made dough. Roll out the dough and cut into circles (approximately 4-5 inches in diameter).

Fill the Empanadas
Place a generous spoonful of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal tightly. Use a fork to crimp the edges for a decorative touch.

Cook the Empanadas
Heat oil in a large skillet over medium heat. Fry the empanadas in batches until golden brown and crispy, about 3-4 minutes on each side. Alternatively, bake them in a preheated oven at 375°F (190°C) for about 20-25 minutes or until golden.

Serve with Chipotle Crema
Serve the empanadas hot with a side of chipotle crema for dipping. To make chipotle crema, mix sour cream with a bit of chipotle sauce to taste.
