    Prepare the Beef

    In a large pot, add the beef chuck roast, dried guajillo and ancho chiles, garlic cloves, onion, cumin, oregano, salt, pepper, and beef broth. Bring to a boil, then reduce heat and simmer for about 2 hours until the beef is tender.

    Shred the Beef

    Once the beef is cooked, remove it from the pot, shred it with two forks, and return it to the pot to soak up the juices.

    Assemble the Empanadas

    Preheat the oven to 375°F (190°C). Take an empanada dough piece, fill it with shredded beef, fold it over, and seal the edges using a fork. Repeat with remaining dough.

    Bake the Empanadas

    Brush the empanadas with vegetable oil and place them on a baking sheet. Bake for 25-30 minutes until golden brown.
