Preparation

    Prepare the Beef

    Season the beef filet with olive oil, garlic powder, cumin, salt, and black pepper. Let it marinate for at least 30 minutes.

    Cook the Rice and Beans

    In a saucepan, heat the cooked rice and black beans over low heat until warm. Stir occasionally.

    Prepare the Plantain

    Peel and slice the plantain into 1/2-inch thick pieces. Heat a skillet with a little olive oil and fry the plantain slices until golden brown on both sides, about 3-4 minutes.

    Cook the Huaraches

    In a separate skillet, cook the huarache dough according to package instructions or until lightly browned on both sides.

Cooking

    Cook the Beef

    In a skillet over medium-high heat, cook the marinated beef filet for about 4-5 minutes per side or until it reaches your desired doneness. Remove from heat and let rest before slicing.

    Prepare the Corn and Spinach

    In the same skillet, add corn kernels and fresh spinach. Sauté until spinach is wilted and corn is heated through, approximately 3-4 minutes.

Assembly

    Assemble the Dish

    On each huarache, layer the warm rice and beans, followed by sliced beef filet, sautéed corn and spinach, and fried plantain. Top with sliced avocado and a drizzle of lime juice.
