    Prepare the Ingredients

    Gather all ingredients and prepare the mixed vegetables by chopping them into small pieces. Peel and slice the plantains.

    Cook the Plantains

    In a skillet, heat some oil over medium heat. Fry the sliced plantains until they are golden brown on both sides. Remove and set aside.

    Cook the Tuna

    Season the yellowfin tuna steaks with salt, pepper, and your choice of jerk seasoning. In a grill pan or skillet over medium-high heat, sear the tuna for about 2-3 minutes on each side for medium-rare. Adjust cooking time for preferred doneness.

    Sauté the Spinach and Vegetables

    In the same pan, add a little more oil if needed and sauté the mixed vegetables until tender. Add the spinach and cook until wilted. Season with salt and pepper to taste.

    Assemble the Dish

    On a plate, create a bed of cooked rice and black beans. Place the sautéed spinach and vegetables on one side. Top with the cooked tuna and arrange the fried plantains alongside.

    Slice the avocado and place it on the dish. Crumble goat cheese over the tuna and drizzle with seaweed salsa for an added flavor.
