Prepare vermouth
If using a slightly bitter or very herbal non-alcoholic vermouth substitute, taste it first. If you prefer a slightly sweeter, rounder profile, stir the 3 oz non-alcoholic vermouth and 0.25 oz simple syrup together in a small mixing glass until combined. Add the lemon peel piece and let it macerate for 1–2 minutes to release bright citrus oils, then discard the peel.
Mix & Finish
Pour the prepared vermouth base over the ice.
Slowly top with 4 oz chilled soda water to preserve carbonation. If you prefer a lighter drink, add up to 2 oz more soda (adjust to taste).
Optional: add 1 dash of orange or non-alcoholic aromatic bitters on the surface and gently stir once or twice with a bar spoon to integrate without losing too much fizz.
Garnish with the thyme or rosemary sprig by lightly bruising it between your palms to awaken the aromatics and placing it in the glass. Serve immediately.
