Preparation

Chill glass

Place a coupe or rocks glass in the freezer for 5–10 minutes, or fill with ice water while preparing ingredients to chill it.

Measure ingredients

Measure the Origami sake, Calpico, fresh lime juice, and yuzu juice. If you prefer a slightly sweeter cocktail, measure simple syrup as well.

Mixing

Fill a cocktail shaker with a scoop of ice (about 1 cup). Add 3 oz chilled Origami sake, 1 oz Calpico concentrate, 0.5 oz fresh lime juice, 0.5 oz yuzu juice, and 0.25 oz simple syrup (if using).

Dry shake (without ice) for 5–8 seconds only if you used syrup and want a slightly frothy texture; otherwise skip the dry shake. Then add ice if you didn't already and shake vigorously for 8–12 seconds until the shaker is cold to the touch.

If you prefer a lightly effervescent, longer drink, add 1 oz cold club soda to the shaker (or pour into the glass later) and gently stir once to combine — do not vigorously shake after adding soda.

Serving & Garnish

Discard ice/water and strain the cocktail into the chilled coupe or a rocks glass over fresh ice if you prefer it on the rocks. Use a fine strainer if you did a dry shake to remove tiny bubbles or frost.

Garnish with a lime wheel or twist on the rim and a small strip of yuzu peel or a micro shiso leaf floated on top for aroma. Express the oils of the citrus over the drink before dropping the peel in.

Serve immediately. To enjoy the balance: sip for the mellow, rice-forward sake notes, the soft lactic creaminess of Calpico, and the bright citrus lift of lime and yuzu.
