Prepare the Enchiladas

Preheat the oven to 375°F (190°C). In a baking dish, spread some enchilada sauce. Fill each corn tortilla with shredded chicken, roll them up, and place seam-side down in the baking dish. Pour remaining sauce over the enchiladas and top with cheese. Bake for 20 minutes.

Make the Tamales

Soak corn husks in warm water for at least 30 minutes. Mix corn masa with chicken broth until a dough forms. Spread masa on corn husks, add pork filling, roll, and tie. Steam for 1 hour.

Cook the Tacos

Brown the ground beef in a skillet, add taco seasoning, and mix well. Fill taco shells with beef, lettuce, tomatoes, and cheese.

Chile Relleno

Prepare the Chile Rellenos

Roast and peel poblano peppers. Stuff with cheese filling, dip in egg batter, and fry until golden brown.

Cook the Carne Adovada Rib

Rub pork ribs with garlic, cumin, and salt. Cook in red chile sauce on low heat for about 2 hours until tender.

Rub pork shoulder with garlic, cumin, and salt. Cook in red chile sauce on low heat for about 2 hours until tender.

Frijoles

Prepare the Frijoles

Cook black beans with chopped onion, cumin, and salt until heated through.

Papitas

Fry the Papitas

Cut potatoes into small cubes, fry in oil until golden brown and crispy. Season with salt.
