Black Beans & Rice

Method

Sautéed Shrimp

  1. 1

    Cook the Shrimp

In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in the shrimp, paprika, salt, black pepper, and lemon juice. Cook for about 3-5 minutes, or until shrimp are pink and opaque. Remove from heat.

Cilantro Crema

  1. 2

    Prepare the Crema

In a mixing bowl, combine sour cream, chopped cilantro, lime juice, and garlic powder. Mix until well combined and smooth. Adjust seasoning with salt if needed.

Corn Salsa

  1. 3

    Make the Salsa

In a bowl, combine corn kernels, diced red onion, diced tomato, minced jalapeño, lime juice, and salt. Mix well and let it sit for 10 minutes to allow flavors to meld.

Cuban Slaw

  1. 4

    Prepare the Slaw

In a large bowl, combine shredded cabbage, grated carrot, sliced red bell pepper, chopped cilantro, lime juice, and salt. Toss well to combine and let it sit for about 10 minutes to soften the vegetables.

Black Beans & Rice

  1. 5

    Combine Beans and Rice

In a medium saucepan, combine drained black beans, cooked rice, cumin, and salt. Heat over medium heat until warmed through, stirring occasionally.
