Preparation of Ingredients

  1. 1

    Prep the Chicken and Sausage

Season the chicken legs with salt, pepper, and paprika. Chop the Andouille sausage into bite-sized pieces.

  2. 2

    Prepare the Vegetables

Dice the onion, bell pepper, and tomato. Mince the garlic cloves.

  3. 3

    Prep the Seafood

Clean the mussels and rinse the shrimp and calamari thoroughly.

Cooking the Paella

  1. 4

    Brown the Chicken and Sausage

In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken legs and cook until browned on both sides, about 5-7 minutes. Remove from the pan and set aside.

  2. 5

    Cook the Sausage

In the same pan, add the chopped Andouille sausage and cook until slightly crispy, about 3-4 minutes. Remove and set aside with the chicken.

  3. 6

    Sauté the Vegetables

Add the diced onion, garlic, and bell pepper to the pan. Sauté until softened, about 5 minutes. Stir in the diced tomato, and cook for an additional 2 minutes.

  4. 7

    Add Rice and Broth

Stir in the Bomba rice, saffron threads, and paprika. Pour in the chicken broth and bring to a boil. Reduce the heat to a simmer.

  5. 8

    Combine Ingredients

Return the browned chicken and sausage to the pan. Simmer for about 10 minutes.

  6. 9

    Add Seafood

Arrange the mussels, shrimp, and calamari on top of the rice. Cover the pan and cook for another 10-15 minutes until the seafood is cooked through and the rice has absorbed the broth.

  7. 10

    Add Peas

Stir in the green peas during the last 5 minutes of cooking. Adjust seasoning with salt and black pepper to taste.

Serving

  1. 11

    Rest and Serve

Once cooked, remove the paella from heat and let it rest for about 5 minutes. Serve warm, garnished with lemon wedges if desired.
