Method

Hummus Preparation

  1. 1

    Prepare the Garbanzo Beans

If using canned garbanzo beans, drain and rinse them under cold water. If using dried beans, soak them overnight and cook them until tender.

  2. 2

    Blend the Ingredients

In a food processor, combine garbanzo beans, tahini, chopped onion, roasted poblano peppers, minced garlic, lemon juice, ground cumin, olive oil, chopped cilantro, salt, and black pepper to taste. Blend until smooth and creamy. If the mixture is too thick, add a little water to reach your desired consistency.

  3. 3

    Taste and Adjust

Taste the hummus and adjust the seasoning with more salt, pepper, or lemon juice if desired. Blend again to combine.

Pita Chips Preparation

  1. 4

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 5

    Prepare the Pita Chips

Cut the pita bread into triangles and place them on a baking sheet. Drizzle with olive oil, sprinkle with ground cumin, and add salt to taste. Toss to coat evenly.

  3. 6

    Bake the Chips

Bake the pita chips in the preheated oven for about 10-12 minutes or until golden brown and crispy. Make sure to toss them halfway through for even baking.

Optional Chicken Preparation

  1. 7

    Cook the Chicken (if using)

Grill or pan-sear the chicken breast until fully cooked. Slice it thinly to serve alongside the hummus.
