Method

Mahi Mahi Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Mahi Mahi

    Rinse the Mahi Mahi fillets under cold water and pat them dry with paper towels.

    Brush with Honey Dijon

    Brush each fillet generously with Honey Dijon mustard on both sides.

    Crust the Fillets

    Combine the crushed plantain chips and roasted pumpkin seeds in a bowl. Press this mixture onto the fillets to create a crust on both sides.

    Season and Bake

    Season the crusted fillets with salt and black pepper, then drizzle with olive oil. Place them on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the fish flakes easily with a fork.

Coconut Black Bean Risotto Preparation

    Sauté the Aromatics

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for another minute.

    Add the Arborio rice to the saucepan, stirring constantly for about 2 minutes until the rice is lightly toasted.

    Add Liquid Gradually

    Pour in the vegetable broth, one cup at a time, stirring frequently. Allow the rice to absorb the liquid before adding more. After about 15 minutes, add the coconut milk and continue to stir until the risotto is creamy and the rice is al dente.

    Stir in the drained black beans and cook for an additional 3 minutes until heated through. Adjust seasoning with salt and stir in chopped cilantro before serving.

Mango Salsa Preparation

    Mix the Salsa Ingredients

    In a medium bowl, combine the diced mango, chopped red onion, diced red bell pepper, lime juice, and chopped cilantro. Season with salt and mix well.

    Chill the Salsa

    Let the salsa sit for at least 10 minutes to allow the flavors to meld together.
