Prepare the Filling
In a mixing bowl, combine shredded cheese, black beans, and chopped green onions. Mix well until evenly combined.

Warm the Tortillas
In a skillet over medium heat, warm corn tortillas for about 30 seconds on each side until pliable. Remove from heat.

Add Spices and Tomatoes
Stir in chili powder, cumin, diced tomatoes, salt, and water. Bring to a simmer, then reduce heat and let cook for about 10 minutes until slightly thickened.
Assembly and Baking

Fill the Tortillas
Place a few tablespoons of the filling in the center of each tortilla. Roll them up tightly and place seam-side down in a baking dish.

Add Sauce
Pour the prepared red sauce evenly over the enchiladas, making sure to cover them completely.

Bake
Preheat the oven to 350°F (175°C). Bake uncovered for 20-25 minutes until heated through and cheese is melted.
Serving

Remove enchiladas from the oven. Top with sour cream and chopped cilantro before serving.
