Crispy Calamari
Pepperoncini Garlic Mayo Sauce
Method
Crispy Calamari
- 1
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This step is crucial to ensure a crispy coating.
- 2
Make the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well until evenly combined.
- 3
Batter the Calamari
In another bowl, whisk together the egg and buttermilk. Dip each calamari ring into the wet mixture, allowing excess to drip off, then dredge in the flour mixture, ensuring it is fully coated.
- 4
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 5
Fry the Calamari
Carefully add a few calamari rings to the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Pepperoncini Garlic Mayo Sauce
- 6
Prepare the Sauce
In a small bowl, combine the mayonnaise, minced garlic cloves, finely chopped pepperoncini peppers, and lemon juice. Mix until well blended.
- 7
Season the Sauce
Add salt to taste, adjusting according to your preference. Mix thoroughly and let the sauce sit for at least 10 minutes to allow the flavors to meld.
