Prepare the Dough

Boil the Mixture
In a medium saucepan, combine 1 cup of water, 1 cup of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once it reaches a boil, remove the saucepan from the heat and quickly stir in 1 cup of all-purpose flour until the mixture forms a ball.

Cool and Add Eggs
Let the dough cool for about 5 minutes. Then, add 2 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract until fully combined.
Prepare the Cinnamon Sugar

Mix Cinnamon Sugar
In a shallow bowl, combine 1 cup of granulated sugar with 2 teaspoons of ground cinnamon. Mix well and set aside.
Fry the Churros

Heat the Oil
In a deep frying pan or pot, heat 4 cups of vegetable oil to 350°F (175°C).

Pipe the Dough
Transfer the dough into a piping bag fitted with a star-shaped nozzle. Carefully pipe 6-inch long strips of dough into the hot oil.

Fry Until Golden
Fry the churros for about 2-3 minutes on each side or until they are golden brown. Do not overcrowd the pan.
