Method

Churrasco (Grilled Skirt Steak)

    Prepare the Marinade

    In a small bowl, mix together olive oil, garlic powder, paprika, salt, and black pepper.

    Marinate the Steak

    Rub the marinade all over the skirt steak and let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Grill the Steak

    Preheat the grill to high heat. Once hot, place the marinated skirt steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

    Rest the Steak

    Remove the steak from the grill and let it rest for 5-10 minutes before slicing.

Vegetables

    Prepare the Vegetables

    While the steak is marinating, slice the red bell peppers, onion, and mushrooms into thin strips.

    Grill the Vegetables

    Place the sliced vegetables on the grill (you can use a grilling basket) and cook for about 5-7 minutes until they are tender and slightly charred. If using fresh corn, grill it until the kernels are tender and slightly charred as well.

    Remove from Grill

    Once grilled, remove the vegetables and corn from the grill and set aside.

Cilantro Crema

    Blend the Ingredients

    In a blender or food processor, combine sour cream, fresh cilantro, lime juice, garlic, and salt. Blend until smooth.

    Adjust Seasoning

    Taste the crema and adjust the salt if necessary. Set aside.

Black Beans and Rice

    Cook the Rice

    In a saucepan, combine the uncooked rice, water, cumin, and salt. Bring to a boil, then reduce to low heat and cover. Cook for about 18-20 minutes or until the rice is tender and the water is absorbed.

    Heat the Black Beans

    While the rice is cooking, heat the canned black beans in a small saucepan over medium heat until warmed through. You can add a little salt and cumin to taste.
