Chicken Preparation

    Marinate the Chicken

    In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and paprika. Add the chicken breasts and coat them thoroughly with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and place on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes.

Mole Sauce Preparation

    Cook the Mole Sauce

    In a saucepan over medium heat, add the chili powder, ground cumin, and cinnamon. Toast these spices for about 1-2 minutes until fragrant. Stir in the tomato sauce and chicken broth, and bring to a simmer.

    Add Chocolate and Peanut Butter

    Once the sauce is simmering, add the dark chocolate, peanut butter, honey, salt, and black pepper. Stir well until the chocolate is melted and the mixture is smooth. Let the sauce simmer for an additional 5-7 minutes, stirring occasionally.

    Serve Chicken with Mole Sauce

    Slice the grilled chicken breasts and place them on a serving platter. Generously drizzle the mole sauce over the chicken. Serve warm with rice or tortillas, if desired.
