Marinate the Shrimp
In a large mixing bowl, combine the rock shrimp, lime juice, lemon juice, salt, and black pepper. Stir well to ensure the shrimp are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the shrimp to marinate and 'cook' in the citrus juices.

Slice the Plantains
Peel the green plantains and slice them into thin rounds or diagonally for a more rustic feel. Aim for about 1/8 inch thick.

Fry the Chips
In a large pot or deep frying pan, heat the oil over medium heat until it reaches 350°F (175°C). Carefully add the sliced plantains in batches, without overcrowding the pan. Fry for about 2-3 minutes per side or until they turn golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fried plantains from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt.
