Pork Carnitas

Prepare the Pork
Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano.

Combine Ingredients
In a slow cooker, combine the seasoned pork, orange juice, lime juice, minced garlic cloves, quartered onion, bay leaves, and water.

Cook
Cover the slow cooker and cook on low for 8 hours or high for 4 hours until the pork is tender and easily shreds.

Shred the Pork
Remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves.

Crisp the Pork (Optional)
For crispy carnitas, spread the shredded pork on a baking sheet and broil for 5-7 minutes until crispy.

Rinse the Rice
Rinse the long-grain white rice under cold water until the water runs clear.

Cook the Rice
In a medium saucepan, combine the rinsed rice, 4 cups of water, and 1 tsp of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

Fluff the Rice
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
