Cook the Rice
In a large pot, combine the long-grain white rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let sit, covered, for another 5 minutes before fluffing with a fork.

Prepare the Beans
In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Stir in the canned black beans (drained and rinsed), cumin, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally until heated through.
