Beef Tenderloin Medallions

Prepare the Beef
Remove the beef tenderloin from the refrigerator and allow it to come to room temperature for about 30 minutes. This will help it cook evenly.

Season the Beef
Pat the beef tenderloin dry with paper towels. Season all sides generously with salt and black pepper.

Sear the Beef
In a large skillet, heat olive oil over medium-high heat. When the oil is hot, add the beef medallions. Sear for about 3-4 minutes on each side for medium-rare, or until it reaches your desired doneness.

Rest the Beef
Remove the beef from the skillet and let it rest for 5-10 minutes before slicing.
Green Chili Mac and Cheese

Cook the Pasta
In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Remove from heat and stir in shredded cheddar cheese, diced green chilies, salt, and black pepper until the cheese is melted and smooth. Stir in the cooked macaroni until evenly combined.

Rinse the asparagus spears under cold water and trim the tough ends.

Stir in the crushed tomatoes and minced chipotle peppers. Season with salt and black pepper. Let the sauce simmer for 10-15 minutes, stirring occasionally.
