Beef Picadillo

Chipotle Cheddar Mashed Potatoes

Method

Beef Picadillo Preparation

  1. 1

    Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

  2. 2

    Add Corn and Mushrooms

Add the corn kernels and sliced mushrooms to the skillet. Cook for another 5 minutes until the mushrooms are tender.

  3. 3

    Cook the Beef

Increase the heat to medium-high. Add the beef tenderloin tips to the skillet and cook for about 5-7 minutes, stirring occasionally, until the beef is browned on all sides.

  4. 4

    Add Mole Sauce

Reduce the heat to medium and pour in the mole sauce. Stir well to combine and let simmer for 10 minutes.

  5. 5

    Finish with Bell Pepper

Meanwhile, dice the red bell pepper and add it to the skillet. Cook for an additional 5 minutes, until the bell pepper is slightly softened.

Chipotle Cheddar Mashed Potatoes Preparation

  1. 6

    Boil Potatoes

Peel and chop the potatoes into equal-sized pieces. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

  2. 7

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add the butter, milk, and chipotle peppers. Mash until smooth and creamy.

  3. 8

    Add Cheddar and Season

Stir in the shredded cheddar cheese until melted. Season with salt and pepper to taste.
