    Prepare Sweet Potatoes

    Peel and chop the sweet potatoes into chunks. Boil them in a large pot of salted water for about 20-25 minutes, or until they are tender. Drain and let cool slightly.

    Mash Sweet Potatoes

    In a large mixing bowl, mash the boiled sweet potatoes until smooth using a potato masher or fork.

    Combine the Mixture

    To the mashed sweet potatoes, add granulated sugar, butter, milk, vanilla extract, and eggs. Mix until all ingredients are combined and smooth.

    Prepare Topping

    In a separate bowl, mix together the brown sugar, chopped pecans, and melted butter for the topping.

Baking

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Transfer Mixture

    Pour the sweet potato mixture into a greased 64 oz. baking pan. Evenly spread the topping mixture over the sweet potato layer.

    Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the soufflé is set.
