Method

Cooking the Pasta

    Boil Water

    Fill a large pot with water, add a pinch of salt, and bring to a rolling boil.

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of the pasta water. Then, drain the spaghetti and set aside.

Preparing the Sauce

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes, stirring occasionally.

    Beat Eggs and Cheese

    In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.

    Combine Ingredients

    Once the pancetta is crispy, remove the skillet from heat. Add the drained spaghetti to the skillet and quickly pour the egg and cheese mixture over the pasta, tossing to combine. The residual heat will cook the eggs and create a creamy sauce.

    Adjust Consistency

    If the sauce is too thick, gradually add reserved pasta water, a little at a time, until desired creaminess is achieved.

    Season

    Season with black pepper and salt to taste. Toss again to combine.

Serving

    Plate the Dish

    Divide the spaghetti carbonara among serving plates.

    Garnish

    Sprinkle with fresh parsley and additional Parmesan cheese, if desired. Serve immediately.
