    Prepare the Salmon Mixture

    In a large bowl, combine the canned salmon (drained), bread crumbs, chopped green onions, beaten eggs, dijon mustard, lemon juice, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Form the Croquettes

    Using your hands, shape the salmon mixture into small patties, about 2 inches in diameter and 1 inch thick. Place them on a plate or tray.

    Fry the Croquettes

    In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the salmon patties to the skillet. Fry for about 4-5 minutes on each side or until they are golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.

White Gravy

    Make the Roux

    In a saucepan over medium heat, melt the butter. Once melted, add the all-purpose flour, whisking continuously for about 2 minutes until the mixture is golden and bubbly.

    Add the Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5-7 minutes.

    Season the Gravy

    Add salt and black pepper to the gravy, stirring well to combine. Allow it to simmer for an additional 2 minutes, then remove from heat.
