    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin fries, about 1/4 inch thick.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the cut potatoes in batches to the hot oil. Fry them until golden brown and crispy, about 5-7 minutes.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. Immediately season with salt to taste.

Gravy

    Make the Roux

    In a saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour and cook for 2-3 minutes until golden brown.

    Add Broth

    Gradually whisk in the beef or vegetable broth until smooth. Bring the mixture to a simmer.

    Season the Gravy

    Add soy sauce and black pepper. Continue to cook for another 5-10 minutes, stirring occasionally, until the gravy thickens.

Assembly

    Layer the Ingredients

    On a serving plate, place a generous portion of hot fries.

    Add Gravy

    Pour the hot brown gravy over the fries.

    Top with Cheese Curds

    Finally, sprinkle the jalapeno cheese curds on top of the fries and gravy.

    Serve Immediately

    Serve the poutine hot, while the fries are crispy and the cheese curds are melty.
