Prepare the Pasta

    Cook the Elbow Macaroni

    In a large pot, bring salted water to a boil. Add 8 cups of elbow macaroni and cook according to package instructions until al dente. Drain the pasta and set aside.

Make the Cheese Sauce

    Melt the Butter

    In the same pot used for the pasta, melt 1 cup of butter over medium heat.

    Add Flour

    Once the butter is melted, whisk in 1 cup of all-purpose flour. Cook for 2-3 minutes, stirring constantly until the mixture turns a light golden color.

    Whisk in Milk

    Gradually add 4 cups of milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook until it thickens, about 5-7 minutes.

    Add Cheese and Seasoning

    Stir in 4 cups of shredded cheddar cheese and 2 cups of shredded Monterey Jack cheese until melted and smooth. Add 1 tsp of salt, 1 tsp of black pepper, 1 tsp of mustard powder, and 1 tsp of paprika. Mix well.

Combine and Serve

    Mix Pasta and Cheese Sauce

    Add the drained macaroni to the cheese sauce, stirring to combine until all the pasta is evenly coated.

    Prepare Topping (Optional)

    In a small bowl, mix 1 cup of breadcrumbs, 0.5 cups of grated Parmesan cheese, and 0.25 cups of melted butter. Stir until well combined.

    Bake (Optional)

    Transfer the mac and cheese to a baking dish. If using the topping, sprinkle it evenly over the top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden and bubbly.
