    Soaking the Lima Beans

    Rinse the lima beans under cold water. Place them in a large bowl and cover them with water. Let them soak for at least 8 hours or overnight.

    Cooking the Lima Beans

    After soaking, drain and rinse the beans. In a large pot, combine the soaked lima beans with 10 cups of fresh water. Bring to a boil, then reduce heat and simmer for 45-60 minutes or until the beans are tender.

Seasoning and Serving

    Adding Flavor

    In a small skillet, heat 4 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and sauté until fragrant, about 1-2 minutes. Add 2 tablespoons of salt and 1 teaspoon of black pepper to the skillet, then mix well.

    Combining Ingredients

    Once the lima beans are tender, drain them and return them to the pot. Pour the sautéed garlic and oil mixture over the beans. Add 3 tablespoons of lemon juice and stir gently to combine. Cook over low heat for an additional 5 minutes.

    Final Touch

    Remove the pot from heat and stir in 1 cup of chopped fresh parsley. Serve warm or at room temperature as a side dish.
