    Prepare the Jalapenos

    Finely chop the fresh jalapeno peppers, removing seeds for less heat if desired. Set aside.

    Make the Cream Cheese Mixture

    In a mixing bowl, combine the chopped jalapenos and cream cheese. Mix until well combined.

    Form the Burger Patties

    In a separate large bowl, combine the ground beef, salt, black pepper, and the panko breadcrumbs. Mix gently until just combined. Divide the mixture into 4 equal portions.

    Stuff the Patties

    Flatten each portion of beef into a disk, add a generous spoonful of the cream cheese mixture in the center, and fold the edges over to seal the patty. Ensure they are sealed well to prevent leakage during cooking.

Cooking the Burgers

    Cook the Patties

    Preheat a grill or skillet over medium heat. Cook the stuffed patties for about 5-6 minutes on each side, or until they reach your desired doneness and the internal temperature is at least 160°F (71°C).

Assembly

    Assemble the Burgers

    Toast the brioche buns lightly on the grill or in a toaster. Place a cooked patty on the bottom half of each bun, top with a slice of cheddar cheese, pickled jalapenos, and leafy greens. Add the top half of the bun.

    Serve immediately with additional pickled jalapenos on the side if desired.
