    Prepare the Ingredients

    Gather all ingredients: 2 eggs, 1 green tomato, 1 English muffin, and 1 cup of hollandaise sauce.

    Slice the Green Tomato

    Wash the green tomato and slice it into thick rounds. Set aside.

    Toast the English Muffin

    Split the English muffin in half and toast it until golden brown. Set aside.

Cooking

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the simmering water. Cook for about 3-4 minutes for a soft yolk or longer if you prefer the yolk more firm. Remove with a slotted spoon and set on a paper towel to drain.

    Sauté the Green Tomato

    In a skillet over medium heat, add a drizzle of olive oil. Add the sliced green tomato and sauté for about 2-3 minutes on each side until slightly soft and golden. Season with salt and pepper to taste.

    On each toasted half of the English muffin, place a slice of sautéed green tomato. Top each with a poached egg and drizzle with hollandaise sauce.
