Potatoes

Method

Preparation

  1. 1

    Wash and Cut Potatoes

Thoroughly wash the Russet potatoes under cold water to remove any dirt. Peel the potatoes if desired, then cut them into even sticks about 1/4 to 1/2 inch thick.

  2. 2

    Soak Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

Cooking

  1. 3

    Heat the Oil

In a large, heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  2. 4

    Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels. This step is crucial to avoid oil splatter and to ensure crispiness.

  3. 5

    Fry the Potatoes

Carefully add a handful of the dried potato sticks to the hot oil, being cautious not to overcrowd the pot. Fry in batches for about 5-7 minutes, or until golden brown and crispy.

  4. 6

    Drain and Season

Using a slotted spoon, remove the fries from the oil and transfer them to a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste.

  5. 7

    Serve

Serve the fries hot as a side dish or snack with your favorite dipping sauce.
