    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Rinse them under cold water and set aside.

    Chop Vegetables

    Dice the onion and green bell pepper, and mince the garlic. Set aside in a bowl.

    Prepare the Corned Beef

    Open the can of corned beef and cut it into small cubes or crumble it with a fork for easier mixing.

Cooking

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion, green bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Combine Ingredients

    Add the cooked potatoes back to the skillet along with the cubed or crumbled corned beef. Sprinkle with paprika, and stir to combine all ingredients evenly. Cook for an additional 5-7 minutes until everything is heated through and slightly crispy.

    Serve

    Remove the skillet from heat. Garnish with chopped parsley before serving. Enjoy your corned beef hash!
