    In a large mixing bowl, combine the ground beef and pork fatback. Mix thoroughly until well combined.

    Add the kosher salt, black pepper, garlic powder, onion powder, paprika, red pepper flakes, ground coriander, and ground mustard to the meat mixture. Mix until evenly distributed.

    Gradually add the ice water to the meat mixture while mixing. This helps to bind the ingredients together and keeps the mixture moist.

Stuffing the Sausages
