Preparation

    Prepare the Venison

    Pat the venison steaks dry with paper towels. Season both sides with salt and black pepper.

    Chop the Vegetables

    Peel and slice the carrots into thin rounds. Cut the zucchini into half-moons. Clean the mushrooms and slice them.

    Mince the Garlic

    Peel and mince the garlic cloves.

Cooking

    Sear the Venison

    In a large skillet, heat the olive oil over medium-high heat. Add the venison steaks and sear for 3-4 minutes on each side for medium-rare. Remove from the skillet and keep warm.

    Sauté the Vegetables

    In the same skillet, add the butter. Once melted, add the carrots, zucchini, and mushrooms. Sauté for about 5-7 minutes until tender. Add the minced garlic and thyme, and cook for an additional 1-2 minutes.

    Prepare the Sauce

    In the same skillet, pour in the red wine and beef stock. Bring to a simmer and reduce by half. In a small bowl, mix cornstarch with water to form a slurry. Stir this into the sauce to thicken it.

    Combine

    Return the seared venison to the skillet to warm through in the sauce for 1-2 minutes. Serve the venison with the sautéed vegetables and drizzle the sauce over the top.
