Prepare Pudding Dough

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, baking powder, and salt.

Add Suet
Stir in the suet until well blended with the flour mixture.

Add Water
Gradually add cold water, mixing until a soft dough forms.

Knead
Knead the dough lightly on a floured surface until smooth. Cover and set aside.

Cook Filling
In a large skillet, heat a little oil and sauté the onion until translucent. Add the beef steak and kidney, cooking until browned.

Add Oysters and Seasoning
Stir in the oysters, beef stock, Worcestershire sauce, thyme, black pepper, and salt. Simmer for 15 minutes.
Assemble and Cook

Prepare Pudding Basin
Grease a pudding basin and roll out two-thirds of the dough to fit the base and sides of the basin.

Add Filling
Pour the meat and oyster filling into the basin, ensuring it's evenly distributed.

Top with Dough
Roll out the remaining dough and cover the filling, sealing the edges tightly.

Steam the Pudding
Place a lid on the pudding basin and steam for about 2 hours, ensuring the water in the steamer doesn’t run dry.

Serve
Once cooked, carefully remove the pudding from the steamer, let it sit for a few minutes, then turn out onto a plate and serve hot.
