Filling Preparation

    Brown the Meat

    In a large pan, heat a tablespoon of oil over medium heat. Add the cubed beef steak and kidney, and brown them on all sides. Remove from the pan and set aside.

    Sauté Vegetables

    In the same pan, add the chopped onion, minced garlic, and diced carrot. Sauté until the onion is translucent and the carrot is tender, about 5 minutes.

    Make the Sauce

    Sprinkle the flour over the vegetables and stir well to coat. Gradually add the beef broth while stirring to avoid lumps. Add Worcestershire sauce, salt, black pepper, thyme, and the bay leaf. Bring to a simmer.

    Combine and Cook

    Return the browned meat to the pan. Reduce heat to low, cover, and let simmer for about 30 minutes, stirring occasionally.

    Prepare the Pastry

    Preheat the oven to 200°C (400°F). Roll out the puff pastry sheets on a lightly floured surface.

    Assemble the Pie

    In a pie dish, pour the meat and vegetable filling. Cover with the rolled puff pastry, sealing the edges. Cut a few slits in the top to allow steam to escape.

    Egg Wash

    Brush the top of the pastry with the beaten egg for a golden finish.

    Place the assembled pie in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and crispy.
