Method

Preparing the Ox Tongue

  1. 1

    Cook the Ox Tongue

Place the ox tongue in a large pot of salted water. Bring to a boil, then reduce heat to a simmer. Cook for about 2-3 hours until tender. Remove from heat and allow to cool.

  2. 2

    Peel the Ox Tongue

Once cooled, carefully peel the skin off the ox tongue. Slice into thin pieces and set aside.

Pickling the Radish

  1. 3

    Make the Pickling Mixture

In a saucepan, combine white vinegar, sugar, salt, and water. Heat over medium heat until the sugar and salt dissolve completely.

  2. 4

    Pickle the Radish

Slice the rainbow radishes thinly and add them to the pickling mixture. Allow to marinate for at least 30 minutes.

Preparing the Dressing

  1. 5

    Mix the Dressing

In a bowl, whisk together the English mustard, olive oil, honey, salt, and black pepper until well combined.

Assembling the Salad

  1. 6

    Combine the Ingredients

In a large serving bowl, layer the sliced ox tongue, pickled rainbow radish, and fresh watercress.

  2. 7

    Dress the Salad

Drizzle the prepared dressing over the salad. Toss gently to combine all ingredients.

  3. 8

    Serve

Serve immediately as a delicious starter or light meal.
