Sponge Cake Preparation

    Preheat the Oven

    Preheat your oven to 180°C (350°F) and grease a 20cm (8-inch) round cake tin.

    Cream Butter and Sugar

    In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy, using an electric mixer for about 3-5 minutes.

    Add Eggs

    Add the large eggs one at a time, mixing well after each addition until fully incorporated.

    Add Flour and Milk

    Sift in the self-raising flour and gently fold it into the mixture. Add the milk and mix until just combined.

    Bake the Sponge

    Pour the batter into the prepared cake tin and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean.

    Once baked, remove from the oven and let the sponge cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

    In a saucepan, combine the Golden syrup, water, and lemon juice.

    Place the saucepan over low heat and stir until the syrup has dissolved completely and the mixture is smooth.

    Increase the heat slightly and bring the mixture to a gentle simmer. Allow it to simmer for 5-7 minutes until slightly thickened.
