Preparing the Beef

Season the Beef
Preheat your oven to 220°C (428°F). Rub the rib of beef with olive oil, then season generously with salt and black pepper.

Roast the Beef
Place the beef in a roasting pan and roast in the preheated oven for about 20 minutes. Then, reduce the oven temperature to 180°C (356°F) and roast for an additional 40-50 minutes for medium-rare, or until desired doneness is reached.

Rest the Beef
Once cooked, remove the beef from the oven and let it rest for at least 15 minutes before carving.
Preparing the Buttered Greens

Blanch the Green Beans
Bring a pot of salted water to a boil, add the green beans, and blanch for about 3 minutes until tender but still crisp.

Heat the Oil
Place a muffin or Yorkshire pudding tray in the oven to heat with a little vegetable oil in each cup (about 1/2 tsp) until it's hot and shimmering.

Pour the batter into the hot oil-filled cups, filling each about halfway. Bake for 20-25 minutes until puffed and golden.

In a small bowl, combine the horseradish sauce and sour cream. Mix until well blended and set aside.
