Method

Preparing the Beef

    Season the Beef

    Preheat your oven to 220°C (425°F). Season the rib of beef generously with salt and black pepper on all sides.

    Sear the Beef

    In a large oven-proof skillet, heat the olive oil over high heat. Add the beef and sear on all sides until browned, about 3-4 minutes per side.

    Add Herbs

    Add the fresh rosemary to the skillet and transfer it to the preheated oven. Roast for 20-25 minutes for medium-rare, or until the internal temperature reaches 55-60°C (130-140°F).

    Rest the Beef

    Remove the beef from the oven and let it rest for at least 15 minutes before slicing.

Preparing the Buttered Greens

    Cook the Green Beans

    Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until tender but still crisp.

    Add Butter

    Drain the green beans and return them to the pot. Add the butter and toss to coat. Season with additional salt to taste.

Making Yorkshire Pudding

    Preheat Oven for Pudding

    Reduce the oven temperature to 220°C (425°F) after removing the beef. Place a muffin tin in the oven to heat.

    Mix the Batter

    In a bowl, whisk together the flour, eggs, milk, and a pinch of salt until smooth.

    Add Oil to Tin

    Add the vegetable oil to each muffin cup in the heated tin, about 1 tsp per cup.

    Bake the Puddings

    Pour the batter evenly into each cup, filling them about halfway. Bake for 20-25 minutes or until puffed and golden brown.

Making Horseradish Cream

    Combine Ingredients

    In a small bowl, mix together the horseradish sauce and sour cream until well combined. Set aside.

Preparing Red Wine Jus

    Deglaze the Pan

    In the same skillet used for the beef, add the red wine and scrape any brown bits off the bottom of the pan. Simmer until reduced by half.

    Add Stock and Thicken

    Add the beef stock and fresh thyme. Simmer for 10-15 minutes until the sauce thickens slightly. Stir in the butter and strain if desired.
