    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into thin slices (about 1/8 inch thick).

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Drain the potatoes and pat them dry with paper towels. Fry a handful of potato slices at a time until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Remove the chips with a slotted spoon and drain on paper towels. Sprinkle with salt while they are still hot.

Dauphinoise

    Prepare the Potatoes

    Wash and peel the potatoes. Slice them thinly (about 1/8 inch thick).

    Preheat Oven

    Preheat the oven to 350°F (175°C).

    Make the Cream Mixture

    In a saucepan, combine heavy cream, minced garlic, nutmeg, salt, and black pepper. Heat gently until just warmed.

    Layer the Potatoes

    In a buttered baking dish, layer half of the potato slices. Pour half of the cream mixture over them. Repeat with the remaining potatoes and cream.

    Add Cheese and Bake

    Top with grated Gruyère cheese. Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.

Mash

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into quarters.

    Boil the Potatoes

    Place the quartered potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and return them to the pot. Mash them using a potato masher until smooth.

    Add Butter and Cream

    Add butter and heavy cream to the mashed potatoes. Stir until creamy and well combined.

    Season and Serve

    Season with salt and black pepper to taste. Serve warm.
