Method

Poaching the Salmon

  1. 1

    Prepare the Poaching Liquid

In a large saucepan, combine 4 cups of water, 1 tsp of salt, lemon slices, and fresh dill sprigs. Bring the mixture to a gentle simmer over medium heat.

  2. 2

    Poach the Salmon

Carefully add the Loch Duart salmon fillets to the poaching liquid. Cook for about 10-12 minutes or until the salmon is just cooked through and flakes easily with a fork. Remove the salmon from the liquid and set it aside to cool to room temperature.

Making the Watercress Mayonnaise

  1. 3

    Blend the Ingredients

In a blender or food processor, combine 1 cup of mayonnaise, 1 cup of fresh watercress, 2 tbs of lemon juice, 1 tsp of salt, and 1 tsp of black pepper. Blend until smooth and creamy.

  2. 4

    Taste and Adjust

Taste the mayonnaise and adjust the seasoning with more salt or lemon juice if needed. Set aside.

Preparing the Shaved Summer Vegetables

  1. 5

    Shave the Vegetables

Using a vegetable peeler or mandoline, shave the zucchini, yellow squash, and carrot into thin ribbons.

  2. 6

    Toss with Seasoning

In a bowl, toss the shaved vegetables with 1 tbs of olive oil, and season with salt and black pepper to taste.

Assembly and Serving

  1. 7

    Plate the Dish

On a serving platter, arrange the poached salmon fillets. Spoon the watercress mayonnaise over the salmon and top with the shaved summer vegetables.

  2. 8

    Add Garnishes

Finish the dish by adding 1 tbs of salmon caviar on top of each salmon fillet and garnish with additional fresh dill.

  3. 9

    Serve

Serve the dish at room temperature, allowing the flavors to meld together and enjoy your Poached Loch Duart Salmon!
