Poaching the Salmon

Poach the Salmon
Carefully add the Loch Duart salmon fillets to the poaching liquid. Cook for about 10-12 minutes or until the salmon is just cooked through and flakes easily with a fork. Remove the salmon from the liquid and set it aside to cool to room temperature.
Making the Watercress Mayonnaise

Blend the Ingredients
In a blender or food processor, combine 1 cup of mayonnaise, 1 cup of fresh watercress, 2 tbs of lemon juice, 1 tsp of salt, and 1 tsp of black pepper. Blend until smooth and creamy.

Taste and Adjust
Taste the mayonnaise and adjust the seasoning with more salt or lemon juice if needed. Set aside.

Plate the Dish
On a serving platter, arrange the poached salmon fillets. Spoon the watercress mayonnaise over the salmon and top with the shaved summer vegetables.

Finish the dish by adding 1 tbs of salmon caviar on top of each salmon fillet and garnish with additional fresh dill.
