Preparing the Soup

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent. Then, add the minced garlic and cook for an additional minute until fragrant.

    Add the Peas and Broth

    Stir in the garden peas and vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for about 10-15 minutes, until the peas are tender.

    Incorporate Lovage

    Add the fresh lovage leaves to the soup, and season with salt and pepper. Allow to simmer for 5 more minutes.

    Blend the Soup

    Remove the pot from heat and use an immersion blender to puree the soup until smooth. If using a regular blender, let the soup cool slightly before blending in batches.

Serving the Soup

    Prepare the Toppings

    While the soup is blending, crumble the Sinodun Hill Goat’s Cheese into small pieces and set aside. Prepare the lemon oil by mixing the oil with lemon zest if desired.

    Plate the Soup

    Ladle the blended soup into bowls. Drizzle a tablespoon of lemon oil over each serving.

    Garnish and Serve

    Top each bowl with crumbled goat’s cheese and a sprinkle of lemon zest for garnish. Serve immediately while hot.
