Preparation

    Prepare the Fish

    Rinse the plaice fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.

    Prepare the Clams

    If using fresh surf clams, scrub them under cold water to remove any grit. Discard any clams that are open or damaged.

Cooking

    Cook the Fish

    In a large skillet, heat olive oil over medium-high heat. Add the plaice fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

    Sauté the Clams

    In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant, then add the surf clams and cook for 2-3 minutes until they open up.

    Create the Sauce

    Pour in the white wine and fish stock, bringing the mixture to a simmer. Reduce the heat and let it cook for an additional 5 minutes to allow the flavors to meld.

    Finish the Dish

    Add lemon juice, chopped parsley, and sea herbs to the sauce. Stir to combine, then return the cooked plaice fillets to the skillet, spooning the sauce over them. Let it cook for another minute to warm through.
