    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and black pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the sliced leeks, minced garlic, and sliced mushrooms. Sauté for about 5 minutes until the vegetables are softened.

    Combine Ingredients

    Return the cooked chicken to the skillet and add chicken broth, heavy cream, and dried thyme. Stir well and let simmer for about 5-10 minutes until the mixture thickens slightly. Adjust seasoning with salt and pepper to taste.

    In a large bowl, combine all-purpose flour and salt. Add the cold butter and rub it into the flour until the mixture resembles breadcrumbs.
