Preparation Steps

    Prepare the Glass

    Chill a champagne flute or coupe glass by filling it with ice water. Allow it to sit while you prepare the cocktail.

    Add the Sugar Cube

    In a separate mixing glass, place the sugar cube and add 2 dashes of Angostura bitters directly onto it. Allow the bitters to soak into the sugar.

    Muddle the Ingredients

    Using a muddler or the back of a spoon, gently crush the sugar cube and bitters together until the sugar is mostly dissolved.

    Add the Cognac

    Pour 1 oz of Couprie Cognac into the mixing glass with the muddled sugar and bitters. Stir gently to combine.

    Strain the Mixture

    Remove the ice water from the chilled glass. Using a strainer, pour the cognac mixture into the prepared champagne flute or coupe glass.

    Top with Champagne

    Carefully add 4 oz of Joseph Perrier Brut Champagne to the glass, pouring slowly to avoid overflow and mixing.

    Garnish and Serve

    Twist a lemon peel over the drink to release its oils and drop it into the glass as a garnish. Serve immediately.
