Ham Preparation

Goat's Curd

Grilled Apricots

Sourdough Crisp

Method

Ham Preparation

  1. 1

    Prepare the Ham

Slice the Carmarthen ham into thin strips and season with freshly ground black pepper. Set aside to allow the flavors to meld.

Goat's Curd

  1. 2

    Make Goat’s Curd

In a bowl, combine the goat’s cheese, heavy cream, and lemon juice. Whisk together until smooth and creamy. Adjust seasoning if necessary.

Grilled Apricots

  1. 3

    Grill the Apricots

Preheat a grill pan over medium heat. Cut the apricots in half and remove the pits. Brush the cut sides with honey and olive oil. Place them cut-side down on the grill and cook for about 3-4 minutes until charred and softened. Remove from heat.

Sourdough Crisp

  1. 4

    Prepare Sourdough Crisps

Preheat the oven to 180°C (350°F). Brush the sourdough slices with olive oil on both sides. Place them on a baking sheet and bake for about 10-12 minutes or until golden and crispy. Remove and let cool.

Herb Oil

  1. 5

    Make Herb Oil

In a blender, combine fresh herbs, olive oil, and garlic clove. Blend until smooth. Strain through a fine sieve if a smoother consistency is desired.

Assembly

  1. 6

    Assemble the Dish

On a serving platter, arrange the slices of Carmarthen ham. Add dollops of goat’s curd, grilled apricots, and sourdough crisps. Drizzle with herb oil before serving.
