Ham Preparation

Prepare the Ham
Slice the Carmarthen ham into thin strips and season with freshly ground black pepper. Set aside to allow the flavors to meld.

Make Goat’s Curd
In a bowl, combine the goat’s cheese, heavy cream, and lemon juice. Whisk together until smooth and creamy. Adjust seasoning if necessary.

Prepare Sourdough Crisps
Preheat the oven to 180°C (350°F). Brush the sourdough slices with olive oil on both sides. Place them on a baking sheet and bake for about 10-12 minutes or until golden and crispy. Remove and let cool.
Herb Oil

Make Herb Oil
In a blender, combine fresh herbs, olive oil, and garlic clove. Blend until smooth. Strain through a fine sieve if a smoother consistency is desired.
Assembly

Assemble the Dish
On a serving platter, arrange the slices of Carmarthen ham. Add dollops of goat’s curd, grilled apricots, and sourdough crisps. Drizzle with herb oil before serving.
